Ingredients:
- 1 box Julie’s Coffee Waffles
- ½ cup Ricotta
- 2 cups Mascarpone or Cream Cheese (softened)
- ¼ cup Powdered Sugar
- ½ teaspoon Vanilla Extract
- Zest of ½ Lemon
- ¼ cup Raw Pistachios, chopped
- ¼ cup Dried Orange Peel
For the Chocolate Dip:
- 1 bar Dark Chocolate, melted
Preparation:
- In a food processor or using a spoon, mix the ricotta, mascarpone or cream cheese, powdered sugar, vanilla extract, and lemon zest until the mixture is thick and smooth. Gently fold in the dried orange peel.
- Place a Coffee Waffle on a plate or board. Spoon a generous tablespoon of the cream mixture onto the waffle, spreading it almost to the edges. Top with another Coffee Waffle. Repeat this process until all the Coffee Waffles are sandwiched with the cannoli cream.
Press the chopped pistachios onto the cream around the edges of each sandwich. Dip half of each waffle sandwich in the melted dark chocolate and place it on parchment paper to set. Serve chilled.
